Yummy Granola Bars!!!

Davis and I are on this new health kick - organic, no food dyes and no processed food...or trying really hard!! I decided to start making most of our snacks, etc! Here is a yummy recipe for granola bars, which Davis likes better then store bought ones! Yay me!!

Here is what you need:
-2 cups oats
-3/4 cup wheat germ
-3/4 cup sunflower seeds
-1 cup peanuts (crushed)
-2/3 cup brown sugar
-1/2 honey (I used organic blue agave)
-4 Tbsp. butter (did half butter and half coconut oil)
-2 tsp. vanilla extract
-1/2 tsp. salt
-8 oz. dried fruit (I used dark chocolate because I didn't have any dry fruit in the cupboard and I wanted to get my chocolate fix).

Directions:
-Crush peanuts and add oats and wheat germ. Place them in a Pyrex and toast them in the oven on 400 degrees for 10-12 min (stir occasionally so they don't burn).
-Prepare 11x13 baking dish with wax paper and lightly spray wax paper with non-stick spray.
-Put brown sugar, honey, butter, vanilla and salt in a saucepan and bring to a simmer, stirring constantly.I added in my chocolate with this mix!
-Now mix EVERYTHING together and place in your Pyrex.
-Spread granola mixture with a wooden spoon.
-Place wax paper on top and press down hard.
-Wait 2-3 hours until everything is nice and cool!
-Now you are ready to cut your bars into a size you like!!
-I wrapped mine up with plastic wrap.

My first post has to be about my adorable Piper Poo!! After all, she does turn one in twelve days! So, here are a few pictures of Piper from day number one till now!
